My sister has been having a rotten week and while I can't fix things, I am hoping this card will cheer her up a little.

Time To Do Some Baking

{~For my wonderful friends Gail and Kay, one in Wisconsin and one in Colorado. Love you both!~}

Peaches & Cream

Drain 1 large can sliced peaches. Reserve 3 Tbsp. juice.

Combine:

3/4 cup sugar

3/4 cup flour

2 Tbsp cornstarch

1/2 tsp salt

1 tsp baking powder

Beat in:

1 egg

1/2 cup milk

1 tsp. vanilla

Pour into greased pie plate (10"). Lay peaches over top.

Blend and spread over peaches:

8 oz. cream cheese

1/2 cup sugar

3 Tbsp peach juice

Sprinkle with cinnamon. Bake at 350 for around 30 - 40 minutes. Do not overbake.
