Time To Do Some Baking

{~For my wonderful friends Gail and Kay, one in Wisconsin and one in Colorado. Love you both!~}

Peaches & Cream
Drain 1 large can sliced peaches. Reserve 3 Tbsp. juice.

3/4 cup sugar
3/4 cup flour
2 Tbsp cornstarch
1/2 tsp salt
1 tsp baking powder

Beat in:
1 egg
1/2 cup milk
1 tsp. vanilla

Pour into greased pie plate (10"). Lay peaches over top.

Blend and spread over peaches:
8 oz. cream cheese
1/2 cup sugar
3 Tbsp peach juice

Sprinkle with cinnamon. Bake at 350 for around 30 - 40 minutes. Do not overbake.

Ron just asked me if I had any ideas for dinner. Nadia responded, "Look at the peach dessert mama made!" Well, I can't say it will be the only thing we should eat for dinner but it may start the meal! Dairy & fruit... if we eat enough it should equal the right amount of servings.
